There are 4 different helmets obtainable for fighters and defenders in the game.

To get the first one (Mirage) you will have to do a quest you get at lvl 29 which tells you to get 30 SPIRIT CORES.

To get the second one (Sylma) you will have to do a quest you get at lvl 36 which tells you to get 30 MARE CORES.

To get the third one (Mithril) you will have to do a quest you get at lvl 43 which tells you to get 30 PINT CORES.

To get the fourth one (Adamas) you will have to do a quest you get at lvl 50 which tells you to get darkmages stone and 3 Endurance lvl 3 lapis.

For the Adamars helmet ( quest lvl 50) to aliance to light you need mages stones and endure lapiz lvl 3
